Description: Dietary fiber (DF) research has drawn much attention recently, particularly in the growing functional food and nutraceutical industry. DF is defined as edible parts of plants or analogous carbohydrates that are resistant to digestion and absorption in the human small intestine. It has been demonstrated that sufficient DF intake has benefits for health maintenance and disease prevention including cardiovascular disease, diabetes, cancer and weight regulation. DF of different origins has different chemical composition and structure as well as physico-chemical properties that would affect its physiological benefits to humans. This talk will provide an overview based on current research on the chemical structure of DF and its relationship with the physiological functions that are beneficial to humans.
